Cookie exchange taking place Thursday

CHICAGO (FOX 32 News) - There’ll be cookies galore at "Cookies & Cheer" a luxury cookie exchange taking place Thursday at the Fairmont Chicago Millennium Park.
Cookies and cheer guests will get to sample the most decadent cookies imaginable and leave with recipes to boot.

Chef Atticus Garant, executive sous chef at the Fairmont Chicago Millennium Park, joined Good Day Chicago to talk about what visitors can expect.

Chef Garant also demonstrated how to make hot chocolate with marshmallow cookies.

The Cookies & Cheer cookie exchange takes place Thursday from 5:30 to 7:30 p.m. Tickets are $50 and available at EventBrite.com. Just search “Cookies & Cheer.”
 

Hot Cocoa Cookie with Marshmallows

Ingredients 

  • ½ c Butter
  • 6oz Chocolate covered Espresso Beans, finely chopped
  • 6oz Semi-Sweet Chocolate Chips
  • 1 ¼ c Light Brown Sugar
  • 3 Large Eggs
  • 2t Vanilla
  • ¼ c Unsweetened Cocoa Powder
  • 1 ½ c Flour
  • 1 ½ t Baking Powder
  • ¼ t Salt
  • 8 oz Semi Sweet Baking Chocolate cut into 1" pieces
  • 16 Large Marshmallows cut in half

Directions: 

1.            In a medium saucepan, over medium heat, melt the butter, espresso beans and the 6 oz of semisweet chocolate chips.  Stir constantly until just melted.  Remove from heat and let stand for 5 minutes to slightly cool.
2.            In a large bowl, combine the brown sugar, eggs and vanilla.  On medium speed, mix just until blended.  Beat in the cooled chocolate mixture just until combined.
3.            Add the cocoa powder, flour, baking powder and salt.  Mix on low speed just until combined.  Cover bowl with plastic wrap and refrigerate for 2 hours.
4.            Preheat oven to 325 degrees.  Line two cookie sheets with parchment paper.  Scoop and drop the cookie dough by the tablespoon, onto the prepared cookie sheets.  Make sure to space them at least 2 inches apart.
5.            Bake cookies for 12 minutes.  Remove cookies from oven and place one piece of chocolate on the center top of each cookie, and then top each cookie with one half of a marshmallow.  Place the cookies back in the oven and back an additional 4 minutes. 
6.            Remove the pan and let cookies cool at least 5 minutes before transferring to a cooling rack.
