Recipes: No-bake Thanksgiving desserts

CHICAGO (FOX 32 News) - Thanksgiving is just a week away, and with so much cooking to get done it can be a stressful day for a lot of folks. But you have some options to make things easier on yourself!

Amanda Barnes, the executive chef at Celeste, joined us LIVE on GDC with some delicious dessert possibilities that don't require baking.

Salted Caramel Pudding

INGREDIENTS:

  • 2 tsp  Salt
  • 6  Egg yolks
  • 4 cups   Milk
  • ¾ cup  Sugar
  • 6 T   Cornstarch
  • 2 T  Corn Syrup

METHOD:
• Heat corn syrup and 1/2 cup of sugar until deeply caramelized, then remove from heat and add milk and salt
• Whisk the remaining sugar, yolks and corn starch together and temper milk into the egg mixture
• Return to mid-high heat and bring mixture to a boil, stirring often
• Boil for one full minute, then strain contents through finest sieve
• Chill mousse and stir before serving

Celeste White Chocolate Mousse

INGREDIENTS:

  • 300 ML  Heavy Cream
  • 4  Egg Yolks
  • 60 ML  Peppermint Schnapps
  • 60 ML  Water
  • Pinch of salt
  • 170 G  White Chocolate
  • 2  Egg whites
  • 3 tbl  Sugar Split

METHOD:
• In a double boiler, whisk yolks, 1 tablespoon of sugar, schnapps, water and salt until reaching the ribbon stage, then set aside
• Fold whites into chocolate
• Whip cream until medium peaks form then fold in cream
• Let mousse set in cooler for 4 hours
